Quick and Healthy Guacamole and Salsa Recipe

Who doesn't like a simple, cheap and healthy pie-hole filler? Avocados are full of heart friendly nutrients, healthy fats, potassium and vitamins e and c. Tomatoes are also packed with vitamins and antioxidants and cucumbers (which have been one of my favourite foods since I was a yoot) are hydrating and vitamin rich. Might I add that on top of all this, these ingredients are also mighty tasty which could just be be their most important features.

This is a great snack because instead of just nibbling on 'unhealthy' tortilla chips alone, you're teaming them up with fruit and vegetables. Best of both worlds.



Guacamole Salsa Tortilla Chips Recipe
Guacamole, Salsa and Tortilla Chips
For this you will need:
  • Half a cucumber,
  • 2-3 large tomatoes,
  • A good handful of coriander or parsely (or both for even more yum. I stupidly forgot to buy these herbs but just imagine they're mixed in!),
  • Half a red onion,
  • Juice of one lime,
  • Tesco value salted tortilla chips (better than Doritos, I swear),
  • One ripe avocado - you want this to be pretty ripe so you can mash with a fork (or blend if you're fancy),
  • A pinch of salt.
All there is to do is thinly slice the onion, tomatoes, cucumber and parsley/coriander. Whack all of this (apart from a quarter of the chopped onion, tomato and parsley coriander which can go into the guacmole if you don't like it plain) into a bowl and mix. Add your salt.

Slice the avocado and remove the stone (but keep it safe, you can pop it into your mashed avocado to prevent it from going brown in the fridge). Scoop out the flesh and with a fork or blender, you can mash (or blend) to make it as smooth or lumpy as you like. Juice the lime and add half to the guacamole and half to the tomato salsa. Get stirring so the juices can do their thing and if you kept some of the tomatoes, onion and parsley/coriander this is the time to add them to the guacamole and stir. Grab those tortilla chips and get crunching!
